Here you have the perfect sweet idea to share together at Christmas and end the year right. Any treat can make a Christmas sweet, but this recipe is especially ideal for this time since it’s easy to make and delicious in taste. “Alfajor” is a dessert recipe present in the cuisine of several Latin American countries, although the recipe and ingredients will differ from one country to another.
Mix the flour, sugar, salt, and cold infused butter, until you obtain a homogeneous dough.
Incorporate the egg without kneading the dough; just mix all the ingredients together until well blended
Add the previously chopped walnuts and mix.
Cover the mixture with a cling film and let it cool for about 30 to 40 minutes or chill in the refrigerator for 20 minutes. The alfajor dough needs to get the right consistency to be able to work it.
Sprinkle a flat surface with plenty of flour to prevent the dough from sticking.
Then, roll out the gough using a rolling pin dusted in flour, to a thickness of 1 cm or 2 cm, and cut out the circles with the desired size for the alfajor.
Prepare the baking tray that you are going to use by placing a piece of greaseproof paper as a base on the tray.
Preheat the oven to 170º C and bake at this temperature for about 10 minutes. It is key to control baking times to obtain the perfect juicy alfajores.
Remove from the oven to a rack until they have cooled completely and then fill the resulting alfajor cookies with dulce de leche or chocolate ganache. This is how you can do it: put the same amount of whipping cream and chocolate cream in a saucepan, adding a teaspoon of the cannabis-infused butter; heat for about 5 seconds in the microwave on a low heat, stirring until the ganache thickens and is finally made. Let it cool so that it acquires consistency and once it cools completely, use as a filling.
With a cutter or a glass, shape the cookies you will use as the top and bottom of the alfajor; the average size is about 5 or 6 cm in diameter but you can do 8 cm if you prefer a larger size for your alfajor. The amount of alfajores you can make with this recipe will depend on the size chosen for your circle tapas.
If you wish to infuse the dulce de leche, or caramelized milk, you need to add the cannabis extract and heat in a bain-marie for a few minute; you can also add a teaspoon of previously infused coconut oil.
